Product Description Forschners Knives are the best inexpensive, stay sharp, usuable knife around. Made with the same quality as their Swiss Army Knives. Lightweight and well balanced, it will be the knife you reach for all the time. The fibrox handles feature a non slip, ergonomic design and are NSF approved. The blades feature a high-carbon no stain steel with the unique Victorinox polished surface and a taper ground edge. You can choose from a complete collection of cooks knives from 6" to 13" blades and the fully forged knife offerings in each category are manufactured exclusively for R. H. Forschner in Solingen, Germany.Did You Know:A Granton edge, or "kullenschiff" edge, has hollowed out grooves on the sides of the blade. These grooves fill with the fat and juices of the product being sliced, which allows for thin, even cuts without tearing or shredding the meat.**The NSF mark is a certification of quality assurance and hygienic design. The National Sanitation Foundation mark is proudly carried on all R.H. Forschner blades with a fibrox or nylon handle and assures you of quality and assurance to use in a commercial environment. Look for this mark. Realize that most manufacturers do not carry this seal!ALSO SEE THIS KNIFE WITH DIFFERENT HANDLE COLORS: 40451 - Blue Handle, 40481-Green, 40421-Red. Also Rosewood Handle-#40020.

Great chef's knife January 6, 2009 We just love this knife. It's incredibly sharp and has a good feel to it. We picked it based on America's Test Kitchen reviews.
awesome knife January 6, 2009 We are mostly prone to buying henkels knives because they are fantastic and last forever. this knife however is more than 1/10 of the price and just simply "rocks"!! we have bought them as gifts as well. definetely worth the price....
Great knife, bad packaging. January 5, 2009 Nice knife. Very sharp and good balance. I would say this $20 knife is comparable to most $60-100 ones. Good buy.
Word of caution with packaging... it just comes in a thin plastic cover. When I opened the box I noticed the knife had cut though the plastic while in transit and was sticking out into the box. Fortunately I noticed and did not stick my hand in without looking. Otherwise I could have been missing a finger or two. Open with care when you receive this.
Great knife at a great price January 4, 2009 I bought this knife eight months ago and have loved it since the day I bought it. When I received it, it was so sharp that it could shave hairs off of my arm. For a stamped blade, it seems very strong and durable. I have not had any problems with rusting or dulling.
The handle is not a cheap plastic handle, it is a durable textured handle that seems like it will last a long time. I also have the rosewood-handle version of this knife. While the rosewood looks nicer and seems more elegant, the Fibrox handle is more comfortable to use.
Since buying this knife, I have also purchased the Santoku version, and the Forschner paring knife, both of which live up to the high standards set by this knife. I tend to use the Santoku version more, but this is just personal preference based on my style of cooking. All of the R.H. Forschner knives are great products at excellent prices.
very favorable bargain January 4, 2009 I received this knife as a gift after the America's Test Kitchen recommendation. The knife handle is non-slip and feels fibrous, hence the name, Fibrox. It seems much more grippy than even a wood handle.
The knife comes extremely sharp out of the box. It passed the old boy scout test of being able to feel each fingerprint while carefully drawing thumb perpendicular to the blade. So far it has held its fine edge, even with my bottom-of-the-coffee-cup "steeling."
The thickness of the backbone of the knife is wide enough that the knife does not flopple. This knife is a very favorable bargain. (Reviewed by husband Brian.)
