Will not last when slicing meat May 13, 2008 7 out of 7 found this review helpful
I owned this slicer for two years, and used it maybe twenty times at most--usually for slicing ham. At first it seemed to work fine. Then I noticed it ran a bit slower with each use until it finally quit working entirely. I disassembled the slicer to see if it could be repaired. Inside I found a rather small burned-out electric motor. In my opinion, this motor is much too weak to last very long if used for slicing meat. The motor in my Kitchen Aid blender is larger (and has lasted for many years under daily use.)
FYI, the EdgeCraft company which manufactures Chef's Choice does not sell replacement motor or gear parts. You must send it to them for repair. However, they don't make repair estimates over the phone. Considering the price I paid for this product, I feel totally ripped off. I will never buy another Chef's Choice product.
I read a review about a different slicer which recommends limiting use to under 10 minutes at a time. I would strongly advise anyone using this slicer for meat to follow the same advice. The tiny 100 watt (~1/8hp) motor in this slicer simply cannot tolerate extended use. It would probably work fine for slicing bread however.
A few final notes: * These slicers used to have 1 yr warrantees, now they are 90 days. * The "condenser" motor mentioned in their ads is nothing special. All small appliances have this type of electric motor. * Some of the Chef's Choice slicers list "peak horsepower". This is a very misleading term. A peak hp motor is not as powerful as a hp motor.
Chef's Choice 630 Food Slicer March 21, 2008 I am a professional Prep Cook in my opinion this is a good place to start if you are looking for a home slicer. I bought this slicer for roasts and cheese. It saves me $4.00 a lb. for sliced beef alone. I find that it is easy to clean and store. For those of you that think this machine is not easy to clean, I use a huge deli meat slicer on average 2 days a week for 5-6 hour a day. The slicer that I use at work takes 30-45 mins. to clean and the parts are very large and hard to handle. The 630 is a breeze to clean. This is my first home slicer and I did a lot of home work before buying the Chef's Choice 630. I am very happy with this product.

Chef's Choice 630 is good slicer for people who care about where was it made. It has good, quiet, smooth motor(feels a bit slow), sharp blade (why not mention what special material it's made of on the gold edge?). Compared with the Chef's Choice 610 (under $100), 630 was made in Germany, that is all. If this make you feel better every time you use it, that is worth the extra $100+ you paid for this model. Unlike the 630, Chef's Choice 610 has a fix tilt for gravity-feed, but 630 does not. why not fix tilted? I think it is because there is a 630 VariTilt, and you will pay anoth $50 more, just for marketing. Actually, gravity-feed is not enough in most of case. You have to put pressor on the it anyway. Also, when you clean it, the VariTilt part is a little hard to clean. That is why I chose the 630 over 632.
Does everything I expected July 26, 2007 We purchased the Chef's Choice 630 a month ago. The main use is for slicing vegetables. It handles tomatoes and green peppers very well. It will also slice very ripe tomatoes without any crushing. We have used it to slice very thin sliced onions, cucumbers and eggplants. We have also used it to slice pork roasts and it performs as expected. The thickness adjustment is easy and uniform. Cleanup is very easy.

I love having this slicer around. It allows me to cut meats as thin as I like for making sandwiches. I use it frequently on roasts, and when I smoke brisket. Great product. Also it comes apart quite easily for clean up.
