The slots in many cutlery storage blocks may need cleaning over time. The advantage of the Clean-Store block from Füritechnics is that the knife blades extend into a hollow space that allows air to circulate and is easily cleaned. The Füri Gourmet Ultra set consists of this contemporary storage system, plus 12 high-performance Füri Pro knives and an Ozitech Diamond Fingers sharpener. Füri Pro knives were designed for professional chefs, but their popularity has grown to the home user, thanks in part to the endorsement of celebrity chef Rachael Ray. The knives are constructed of a high-carbon stainless-steel alloy in a single piece, to eliminate rivets and seams that can harbor food particles or cause discomfort. In fact, the 'reverse wedge' shape of the handles makes them easier to grip even when hands are wet, reducing strain during long bouts of chopping and cutting. The blades are easily honed and sharpened. The Füri Pro line is the precursor to the more expensive, German-steel Füri FX line. The Gourmet Ultra set consists of the following knives: 6 steak knives that are straight-edged (not serrated) for superior cutting; 3-1/2-inch paring; 6-inch serrated utility; 7-inch scalloped East/West; 8-inch carving; 8-inch bread; and 8-inch cook's. Fast becoming popular among professional and home chefs, the East/West combines the traditional scalloped edge of a Japanese santoku, excellent for thin slicing of delicate foods such as tomatoes, with the rocking and chopping motion of a Western chef's knife. The Ozitech sharpener folds up into a compact case, and unfolds to expose the Diamond Fingers method of sharpening.
