Product Description This Japanese Santoku is the cutting edge knife for a multitude of culinary tasks-slicing, dicing and mincing. The razor-sharp blade is precision forged from one piece of solid steel and Friadur ice-hardened for edge retention and corrosion resistance. An enhanced bolster design and gorgeous ergonomic handle offers superior control and balance, while a row of hollow grounds reduces cutting friction and prevents food from sticking to the blade.
Amazon.com Review One of the newest premium lines from Zwilling J.A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizontally. In fact, the handle is absolutely stunning, with the shiny tang curving slightly as it courses through the black nonslip polypropylene. With no rivets or gaps, the ergonomic handle provides seamless comfort, while the full tang adds weight for precision balance. The forged, single-piece blade, made from high-carbon, no-stain steel and strengthened in Henckels's Friodur exclusive Friodur ice-hardening process, retains its sharp edge through extensive cutting and chopping. Made in Germany and covered by a lifetime warranty, Twin Cuisine knives are dishwasher-safe but are best cared for when washed and dried by hand. Thanks to the rising popularity of sushi and other Asian delicacies, Asian-style knives are now commonly found in American kitchens. A medium-size Asian chef's knife from the Twin Cuisine collection, the 5-1/2-inch santoku features a straight spine that curves downward to a fairly flat edge that excels at a multitude of chopping, slicing, and dicing food preparation tasks. Hollowed-out ovals along the razor-sharp edge reduce friction during cutting, resulting in paper-thin slices of fish, meat, or vegetables. A versatile addition to any kitchen, the santoku makes a superb gift for the chef who especially enjoys preparing Asian cuisine. --Ann Bieri From the Manufacturer | Twin Cuisine is the first quality forged knife to combine the comfort of a truly ergonomic, molded handle with the precision weight and balance of a full horizontal tang. Plus, the Twin Cuisine's exclusive, award-winning patented handle design is a new standard in fine cutlery (U.S. design patent #D524,121). The series is available in a variety of styles for a variety of cutting tasks. Twin Cuisine is also available in a variety of block sets and gift sets. The Twin Cuisine series truly is a masterful blend of form and function. | | A Higher Standard in Knife Construction Twin Cuisine knives are traditionally forged from a single piece of J.A. Henckels's exclusive high-carbon, no-stain steel formula. The result is a knife with high durability, professional strength, and weight. Twin Cuisine also uses J.A. Henckels's Friodur ice-hardening process, which results in a blade that has excellent cutting-edge retention and corrosion resistance. The blade edge is precision honed and laser controlled to maintain a sharper and consistent blade angle. New Ergonomic Handle Technology | The Twin Cuisine handle features exclusive new and innovative handle technology: a full horizontal tang without rivets. High-impact polypropylene is bonded with J.A. Henckels's high-carbon, no-stain steel, resulting in a remarkably comfortable handle with a smooth shape and no gaps. The world-famous Zwilling J.A. Henckels logo is etched on the end of every Twin Cuisine knife handle. indicating its quality. | | Features - Traditional one-piece hot drop-forged construction: Provides high durability, strength, and weight.

get a handle! April 30, 2008 love the blade. the handle, not so much. got the 2 knife set about a year ago (this one w/ the paring knife.) the blades are great, super sharp and cut well. however the handles on both knives cracked in several places after only a few months of TLC care. (hand washing only, handled carefully). I love henkel knives and have used them for years, I will just get them with a different kind of handle in the future. also with this particular model it took me a few weeks to get used to the handle-heavy balance.
Great Knife March 7, 2008 I've been buying Henckel knives for my children for the past couple of years. Gifts for Christmas mainly, they keep asking for more. The latest being a twin cuisine 7-inch santoku hollow edge. My son raved about this knife, saying it was the best all around kitchen knife ever made. They do alot of entertaining and appreciate good sharp knives in the kitchen. So this one is a real winner and probably won't be the last one I buy.....
Blade cracked! February 21, 2008 I received this knife for Christmas last year and I absolutely loved it. However, after a year of normal use (and gentle cleaning, handling, etc...it was expensive so naturally I took good care of it) it began to show rust spots on the blade. Shortly after I noticed a crack running half way up the blade. I cannot use it anymore, due to the crack. It seems like for the price the blade should be more durable. I am very dissappointed, as I always heard great things about this brand.
Professional Quality Knife! January 18, 2008 I ordered this knife for my husband for Christmas. He LOVES it! It is heavy, but perfectly balanced. It slices through just about anything like "butta". It is his first really, good quality knife. Now he knows why I've always been so picky about my other Henckel knives! We love the sleek style and modern look. A home run!!
Great Knife October 31, 2007 Before Buying a knife always try to go to a store and test them out. This Knife is HEAVY, (50-50) Distribution. WHICH IS WHAT I LIKED ABOUT IT. Everybody has the personal preference and what works for them. I find the balance ideal for me.
The knife handels well. Is exremely sharp and feels great in your hand. It is hard to buy Knives online without testing them first. (Esecially expensive one) I went to the store tried them out then bought them from Amazon because of price.
