Product Description This is the vegetable slicing knife preferred by foremost macrobiotic cooking experts in North America. The handle is black ebony wood riveted to the body and stainless steel ferrules with special attention paid to balance, honing and temper. 6 1/4" blade, 11 1/8" overall This knife is a product of NHS, a premier cutlery maker in Seki City, Japan, famous for Samurai Swords and fine cutlery. It is designed to permit exceptionally thin slicing of vegetables, specifically for vegetarian and macrobiotic cooking. To achieve this, the cutting blade is made with a sword grade, compound cutlery steel that is capable of holding a razor sharp edge. The slicing ability is superior to any other similar knife available. The unique cutting edge has a tendency toward staining, however, and is more subject to chipping than heavy duty knives. Therefore for appearance and to provide additional strength, the blade is sandwiched between outer layers of stainless steel, exposing only the cutting edge. The exceptional thinness of this combination blade can be seen by viewing along its top edge. Proper care will provide many years of superior use. Our NHS knives are from Seiki City, Japan, famous for the Samurai sword and fine Japanese cutlery. They feature extraordinarily thin blades of the highest quality compound steel in the center and outer sandwiching layers of SUS-410 stainless steel.
